Age of Light refers to our best parcel of Cabernet Sauvignon and only produced in vintages the winemakers determine worthy of the label. Made in extremely limited quantities, this wine was aged in the best barriques from Bordeaux for 18 months prior to bottling. The 2021 Age of Light comes from our “Kids Cabernet” block, situated directly behind the winery. This tiny parcel was planted in 2017 using clones 169 & 337 and is limited to just 120 dozen.

VINTAGE CONDITIONS
The 2021 vintage was in a word ‘Brilliant’. Barossa saw cool and dry conditions which has produced excellent quality reds and whites. Great growing conditions combined with good yields created a memorable harvest, with all wines showing a wide array of aromas and flavours. Soft supple tannins are in abundance in the reds which has ensured easy drinking in their youth, with careful cellaring also reaping rewards. The highlight for 2021 was the overall quality, a genuine 10/10 season.

WINEMAKING
Planted to two clones of Cabernet Sauvignon sourced from Bordeaux in France. These are widely regarded for their ability to emphasise varietal character, which can be challenging to achieve in our dry and warm climate. The fruit for this wine was picked on the 27th of March and fermented in an open fermenter for 11 days prior to pressing. Aged in a mix of new and older french oak barriques for 18 months prior to bottling.

APPEARANCE:
Purple, crimson with a dense centre and a youthful edge.
BOUQUET: Blackberries, mulberries and cherries with hints of charry oak.
PALATE: Full bodied with black cherries, vanilla and leather characters. The fruit is solid and tightened by oak and tannin in its youth. With cellaring, the oak will lay down and the fruit will prevail.
FOOD MATCH: Best enjoyed with a roast lamb.
